Shinano Murasakikake soy sauce has been cultivated alongside local Shinshu cuisine and is a favorite among professional chefs. Due to the food culture and climate of Shinshu (long-term low-temperature aging), it is characterized by a lighter color and mellower flavor than regular dark soy sauce. It is an excellent match for sushi, sashimi, hiyayakko (cold tofu), ohitashi (boiled vegetables), and more. Please try it as a "tabletop soy sauce" for your dinner table first.
