This ohitsu has been carefully crafted by a craftsman. The fine wood of Sawara, one of the five Kiso woods (hinoki, sawara, nezuko, asunaro, and koyamaki), has excellent mizuhiki (water-based string), is water-resistant, and is lightweight, making it the perfect material for an ohitsu. While the rice is warm, the ohitsu absorbs excess moisture, and as it cools, it replenishes moisture to prevent the rice from becoming hard.
